The project aimed to adapt the existing school kitchen. By tearing down the adjoining walls and opening the space towards dining room, we organized the kitchen with a self-service line. Preparatory part of the kitchen is hidden from the view, while the thermal part with stove, barbecue and convection oven can be seen from the dining room. Since a hot meal is cooked for students daily, a warm bath (bain-marie) for preserving prepared food is envisioned as a part of the distribution line. After meal, the students themselves return treys onto corresponding trolleys which are then taken to be washed. With our equipment, delivery and installation, the project was realized and put into operation in 2011.
